Pumpkin and Turmeric Soup
The perfect Winter warmer...
The perfect supper for those colder nights drawing in. Pumpkin is the perfect carbohydrate with anti-inflammatory and antioxidant properties as well as blood sugar balancing effects. Teamed with the anti-inflammatory benefits of the turmeric make this soup one of the best when feeling the effects of illness and those dreaded seasonal colds. Team this with a green salad and some sourdough toast for the perfect winter warmer.
Method
Chop the pumpkin/squash into cm cubes
Dice the onion and chop the chilli and garlic
Add the coconut oil/butter to a large saucepan and sauté the chilli, onion and garlic
Add in the butternut squash to the pan and soften over a medium heat for 10 mins
Add in the stock and simmer till the squash is soft
Blitz with a hand blender till smooth consistency
Garnish with olive il and pumpkinseeds

1/2 a medium pumpkin or 1 whole medium squash
1 x red onion
2 cloves garlic
½ x red chilli
1 x litre of veg stock
Coconut oil/butter to sauté
