Ingredients
80g parsley – chopped finely
40g mint – chopped finely
few sprigs basil – chopped finely
few sprigs coriander - chopped
3rd cucumber - cubed
3 salad tomatoes – chopped
3 spring onions – chopped
½ bag pre cooked quinoa (cheats version)or bulgur wheat
½ pomegranate – seeds
lemon – juiced
2 tbsp extra virgin olive oil
Chop all the ingredients into small pieces and mix with the lemon juice and olive oil – add Himalayan rock salt to taste.
